Spring is in the air and so is Rum. One of the oldest spirits that’s finally getting its face in the spotlight, is the big rage for all cutting edge cocktail bars and fancy joints in town. Does not hurt to make them in Mustique!
Bright and Clear
- 1 1/2 oz Spicy Rum
- 1 oz fresh pineapple juice
- 1 oz Jamaican ginger beer
- large spoon of cane sugar
Shake all ingredients w/o the ginger beer. Strain over ice into a coconut shell and top with ginger beer. Garnish with a wild orchid.

I’m in a series of pairing and tasting classes at MiN, “Journey of the Senses” an Apothecary, in Soho, that carries niche scents from France and Europe. I create cocktails that match the scents perfectly.
